First, what you consider to be 'utter garbage' is
your opinion. There are a lot of people who like soap operas (as there are a lot who likes telenovelas). The number of soap operas out there, and the fact that a lot of them are running for years if not decades, is just one proof. No network would have aired them if they didn't have an audience. Hell, there was a telenovela in Brazil that, as far as I can remember, had 85% rating!
Second, it's a good job. Do I want Jensen to be a part of a blockbuster? Hell Yeah! Do I want him to be out of a job for years later? Absolutely not. He was on DOOL (Days of Our Lives) for three years. He had a job. A (relatively) safe one. In the end, acting is a job. You need the paycheck.
Third, I think soap operas are actually a great acting school. They have a cast that runs for years, which can built an actor, especially a young actor, confidence. You get to learn from so many people, be that your co-stars, the directors, the writers...
And there's the time frame. Don't forget that most soap operas (if not all) air on a daily basis. It's not a series where you work on an episode for 5-8 days (or something like that). It's tough.
I read an article with Jared Padalecki the other day, where he talked about wanting more time to work on the script or the character instead of filiming and filiming, and I couldn't help but think about Jensen and DOOL. Because that's just it. I don't know how much time an actor on a soap opera has to do all that, and yet, from what I understand, Jensen was great as Eric (I don't remember watching DOOL).
I'm guessing that an actor takes something from every role that he plays. And Jensen had played Eric for three years! If that's part of what made it possible for us to see Ben, Alec and Dean...
